

Spicy Maple Apple Balsamic Grain Bowl
This is a go-to meal for me in the fall and winter months. It’s jam packed with a ton of my favorite flavors: tangy apple, tart pomegranate, topped with a sweet maple balsamic dressing. I love topping it with roasted cashews for that extra crunch.
What you’ll need

Greens and/or grains of your choosing (I love a base of wild rice and kale, but the choice is up to you)

1 pink lady apple, cored and chopped into cubes

½ cup of pomegranate seeds

Half of a sweet potato, chopped

Chipotle powder

Protein of your choice

⅓ cup of toasted cashews (optional)
For the dressing:

2 tsp Female Rage Tangy Crimson Apple

Two tbs olive oil
-
1 tbs maple syrup

1 tsp balsamic vinegar

Salt and pepper to taste

Preheat your oven to 425 degrees. While it heats, cube your sweet potato* and toss with olive oil, chipotle powder, salt, and pepper. Arrange on a sheet pan and roast for 10-15 mins.

Prep your greens!

Chop your apple and measure out pomegranate seeds.

Once the sweet potatoes are done, toss the cashews in the oven for 5 minutes. While they’re toasting, blend all the ingredients for the dressing.

Assemble sweet potatoes, apples, and pomegranate seeds over the bed of greens/grains. Top with toasted cashews and the dressing.
* I scrub the potato well and keep the skin on, but this is just personal preference.
