Sweet Potato and Bean Tacos

I’m feeling like tomorrow will be a Taco Tuesday for me. I’ve been on a black bean and sweet potato kick. With fresh guac! *Chef’s kiss* I plan on roasting the sweet potatoes with some paprika and chipotle powder and then busting out some Brown Sugar Peach to drizzle on top. My roommate has a tortilla press — maybe we’ll make some from scratch…
